- 60ml fresh coconut toddy
- 30ml white rum
- Fresh mint leaves
- 1 tsp palm sugar or jaggery syrup
- Lime wedges
- Ice
Instructions:
Muddle mint and lime with palm sugar, add rum and toddy, shake with ice. Strain into a tall glass. Garnish with mint and a slice of coconut.

- 90ml palm toddy
- 20ml tamarind juice
- 10ml honey or jaggery syrup

- 45ml coconut toddy

- 15ml fresh lime juice
- 10ml green chilli syrup (or muddled green chilli + sugar)
- Salt-chilli rim
Instructions:
Shake all ingredients with ice. Rim the glass with chilli-salt and serve chilled.
Pair with: Chettinad chicken or chilli paneer.
Curry Leaf Toddy Fizz
Herbal, earthy, effervescent.
Ingredients:
- 60ml coconut toddy
- Curry leaf simple syrup (infuse sugar syrup with curry leaves)
- Splash of soda
- Ice and a lemon wedge
Instructions:
